This early Royal, harvested in November of this year, is an autochthonous and limited variety of red olive with qualities and particularities that make this variety unique in the world.

Pairing

Fish, seafood, salted fish, smoked fish, vegetable creams, salmorejo… Ideal for highlighting any dish.

Tasting notes

Intense green to gold in colour. In the nose, intense green fruitiness and complex aromas of green banana, apple, grass and mint. On the palate, clean and elegant with a sweet entry, which gradually turns to a moderate spiciness.
